Patrick, The two Chinese characters 林双 is pronounced Lin Shuang in Mandarin. Since your ancestor came from 厦门 which is pronounced Xiamen in Mandarin and in the local Hokkien (福建话) or Minnan (闽南话) dialect it is pronounced Amoy. 林双 is pronounced Lim Siang in Hokkien/Minnan dialect. Somehow the Siang was transliterated as Song when he arrived in the New Hebrides. In the name 林双, the surname is 林 Lin/Lim and 双 Shuang/Siang (Song) was his personal name (please see: houseofchinn.com/ChineseNames.htm). It was misunderstood by English/French practice and unfortunately, Song became his surname thereafter in the New Hebrides and Noumea. His personal name 双 was written in “brief” or abbreviated Chinese character which is now referred to as Simplified Chinese character.
