Lost in Translation Ah Too/Doo

I am searching for the true family name of my Grand Father Jimmy Ah Too and his village of origin.I have started the search on our family tree, my father Stephen Doo is the last surviving child he is 96 years of age.Family tales go like this Jimmy Ah Too and his brothers came out from Canton to go the Gold fields but were dumped off the ship at Darwin and they had to make their way overland to the Eastern Seaboard.One of his brothers were killed en route by Aboriginals . We estimate he was 20 years old when he came out to Australia, so he was born about 1854 to 1860 The name on certificates starts as Ah Too changes to Too then finally Doo.My maiden name.The earliest certificate I can find on Jimmy is his marriage certificate dated 28/12/1886 Tamworth NSW Australia, to my grandmother Mary nee Ga Kong or Gah Kong I have two different spellings( her step fathers surname)It would appear he was a storekeeper in "Vegetable Creek" now called Emmerville NSW.They then moved to Stanthorpe where he is again listed as a storekeeper on the birth certificates of his two eldest children in 1880 & 1890. Jimmy's brother Henry Ah Too remained in Stanthorpe and was buried there in 1915, his wife Sarah is also buried there in 1893 . My Grandparents, moved to Brisbane where he set and ran Market Gardens at Kedron .That is basically all the information I have on him. My Uncle Charlie Ah Too was sent to China when he was about 8 about 1898 and was lost until returning to Australia when he was in his twenties.He left a wife & children in China but due to the terrible "White Australia Policy" he was not allowed to bring them back. He did visit them a few times and continued to support them from Australia.So I am holing there is records somewhere in Canberra on him as this could lead to discovering more about my Grand father.Can anyone help?
